🍏 Apple & Fennel Compote

🛒 Ingredients
3 large apples (Ingrid Marie, Aroma, or similar)
1 large fennel bulb, thinly sliced
1 shallot, finely chopped
1 tbsp butter
1 tbsp olive oil
50 ml (⅓ cup) unfiltered apple juice
1 tsp apple cider vinegar
1 tsp honey
Fine sea salt, to taste
White pepper, to taste
👨🍳 Method
Dice the apples, leaving the skin on
Thinly slice the fennel
Gently sauté the shallot in butter and olive oil until soft and translucent
Add the fennel and let it sweat gently without browning
Add apples, apple juice, and honey
Simmer 10–15 minutes until soft but still structured
Finish with apple cider vinegar, salt, and white pepper to taste
