🍏 Apple & Fennel Compote

🛒 Ingredients

  • 3 large apples (Ingrid Marie, Aroma, or similar)

  • 1 large fennel bulb, thinly sliced

  • 1 shallot, finely chopped

  • 1 tbsp butter

  • 1 tbsp olive oil

  • 50 ml (⅓ cup) unfiltered apple juice

  • 1 tsp apple cider vinegar

  • 1 tsp honey

  • Fine sea salt, to taste

  • White pepper, to taste

👨‍🍳 Method

  • Dice the apples, leaving the skin on

  • Thinly slice the fennel

  • Gently sauté the shallot in butter and olive oil until soft and translucent

  • Add the fennel and let it sweat gently without browning

  • Add apples, apple juice, and honey

  • Simmer 10–15 minutes until soft but still structured

  • Finish with apple cider vinegar, salt, and white pepper to taste
