🥪 Dijon Grilled Cheese with Caramelized Onion
A cozy bistro-style grilled cheese, elevated with sweet caramelized onions, sharp Dijon and perfectly melted cheese. Served alongside classic tomato soup for the ultimate comfort pairing.

🛒 Ingredients (for 2 sandwiches)
Bread
4 slices sourdough bread
Unsalted butter, softened (for frying)
Cheese
120 g Gruyère, grated
60 g Västerbotten cheese, grated
(or Comté / Fontina)
Caramelized Onion
1 large yellow onion, thinly sliced
1 tbsp butter
1 tsp olive oil
Pinch of salt
Flavor Layer
1–2 tsp Dijon mustard (thin layer)
Freshly ground black pepper
Fresh thyme or sage (optional)
👨🍳 Instructions
1. Caramelize the Onion
Heat butter and olive oil in a pan over low heat
Add sliced onion and a pinch of salt
Cook slowly for 20–25 minutes, stirring occasionally
The onion should be soft, golden and sweet
Set aside
2. Prepare the Sandwich
Butter one side of each bread slice
Flip two slices butter-side down
Spread a very thin layer of Dijon mustard
Add grated cheese evenly
Top with a spoonful of caramelized onion
Finish with black pepper and herbs (optional)
Close the sandwich with remaining bread slices, butter-side up
3. Slow Fry for Perfect Melt
Heat a pan over medium-low heat
Fry sandwiches slowly, 3–4 minutes per side
Press gently with a spatula
Cook until golden and crisp, with fully melted cheese
Optional fine-dining touch:
Transfer to oven at 175°C / 350°F for 5 minutes after frying for extra even melt.
